Listorious Interview
A GOOD Pinot, that's rich and robust (like ours) and is full of tannins: 6-15 years! Depends on the cork and the acid content. After that time, it doesn't go bad, but the wine softens. If the cork is still intact, the wine changes, and is not as fruit forward. It softens and rounds but can still be appreciated.
