What do you think the essential basics are for a great (and easy) party spread? Thought I would check with the expert! :)

so many to choose from! here are 4 we've used recently with great entertaining success...

>>blue cheese fans will love Williams-Sonoma's Blue Cheese Dip (http://www.williams-sonoma.com/recipe/blue-cheese-dip.html)...go heavy on the cream cheese and the blue cheese for a denser, spreadable texture. We like to add minced shallots as well for extra zing.

>>Herbed Ricotta Spread can be tailored to personal tastes by folding in diced tomatoes, other herbs such as basil or marjoram, shredded parmigiano, and/or flaked red pepper for a kick. >>Tuscan White Bean Spread...so easy, so delicious. Puree 1 can of drained white beans with 1 head of roasted garlic (removed from skin), 1 TB extra virgin olive oil. Stir in 1-2 TB of chopped rosemary and sea salt/cracked pepper to taste. Top with julienned sun-dried tomatoes if you like before serving.
